BLACK-EYED PEA SPECIAL 
2 (10 oz. ea.) packages frozen black-eyed peas
1 1/4 c. chopped green pepper
3/4 c. chopped onion
3 tbsp. bacon drippings
1 (7 1/2 oz.) can whole tomatoes (undrained), chopped
1/2 tsp. salt
1/4 tsp. pepper

Cook black-eyed peas according to package directions. Drain and set aside. Sauté green pepper and onion in bacon drippings until tender. Add peas, tomatoes, salt and pepper. Cook over low heat until thoroughly heated, stirring often.
