PEACH HARVEST BEEF 
1/2 c. sliced (or slivered) almonds
2 tbsp. oil
3/4 lbs. sirloin or flank steak, cut in strips
1 c. sliced green pepper
1/2 c. chopped onion
1 (8 3/4 oz.) can sliced peaches, undrained
1 1/4 c. water
2 tbsp. soy sauce
1/2 tsp. salt
1/8 tsp. pepper
1 1/2 c. dry minute rice

Saute almonds in oil until lightly browned. Add beef, peppers, and onion. Saute until beef is browned. Add peaches, water, soy sauce, and seasonings. Bring to a full boil. Stir in rice. Cover and remove from heat. Let stand 5 minutes. Fluff with fork. Makes 4 servings.
