CHEESE-GRITS CASSEROLE 
6 c. boiling water
1 tsp. salt
1 1/2 c. reg. grits (not instant)

Add grits to boiling water with salt, stir until thickened. Immediately add:

1 stick butter
1 tsp. Tabasco sauce
2 tsp. seasoning salt

Mix well and add 1 pound of grated Cheddar cheese. Beat well 3 eggs and add spoonfuls of hot grits mixture to eggs and stir until they are very warm. Add egg mixture to the grits mixture and pour in greased Pyrex 9 x 13 inch pan. Sprinkle 1 teaspoon paprika over top and bake at 250 degrees for 1 hour. Serve hot.
