PASTA SHELLS WITH CHEESE 
1 (12 oz.) pkg. shells
1 1/2 lbs. Ricotta or cottage cheese
1/4 lb. Mozzarella cheese
1/3 c. grated Parmesan cheese
1/4 c. chopped parsley
1/2 tsp. salt
1/4 c. cracker meal
2 pt. jars meatless spaghetti sauce

Add 1 tablespoon of salt to 4 quarts of rapidly boiling water. Gradually add shells so that the water does not stop boiling. Boil, uncovered, 15 minutes. Stir occasionally. Drain off only a portion of water, allowing shells to remaining in warm water.

Mix cheese, eggs, parsley, salt, and cracker meal. Remove one shell at a time from the warm water. Stuff each shell with the mixture, using a tablespoon. Pour 1 jar of sauce into a large shallow casserole. Arrange stuffed shells in casserole. Add second pint of sauce. Cover and bake at 375 degrees for 30 minutes.
