1 ice cream pail of crab apples
8 tsp. cream of tartar dissolved in 5 qts. boiling water

Pour over apples. Let stand for 24 hours. Strain the juice. Cook to boiling and add 1 1/2 cups sugar. Pour into hot sterile jars and process.
