ZUCCHINI BREAD | |
4 c. flour 1 tbsp. baking soda 1/4 tsp. baking powder 1 1/2 tsp. salt 1 1/2 tbsp. cinnamon 1/2 tsp. nutmeg Combine all the above in bowl and set aside. Combine 5 eggs, 2 cups sugar, 1 cup brown sugar, 1 1/2 cups vegetable oil and 1 tablespoon vanilla. Beat with mixer until blended. Shred 2 cups zucchini, 1 cup shredded apple and 1 1/2 cups chopped pecans. Combine top mixture with egg mixture and then zucchini mixture until well blended. Bake at 350 degrees until done. |
