3 med. onions, chopped 1/2 c. chopped green pepper 1/2 c. vegetable oil 29 oz. can tomatoes 2 (6 oz.) cans tomato paste 1 1/2 c. dry white wine 1 c. water 2 cloves garlic, minced 1/3 c. chopped parsley 1 tsp. salt 1 tsp. oregano 1 tsp. basil 1/2 lb. shelled shrimp 1/2 lb. shredded crab 1 1/2 lb. fish fillets, cubed 1/2 lb. scallops & 1 doz. oysters or clams Saute onions and green pepper in vegetable oil. Add balance of ingredients except seafood, heat to boiling and simmer 5 minutes. In large kettle, arrange shrimp and crab in layers. Pour tomato mixture over, cover and simmer for 15 minutes. Add fish fillets and simmer for 15 minutes. Add scallops and oysters (or clams) and simmer 10 more minutes. Serve with crusty loaves of bread. |
