RICE POP OVERS 
2 c. cold boiled rice
2 c. sifted flour
2 tsp. baking powder
2 tbsp. sugar
2 eggs, separated
2 c. milk
1 tsp. salt

Stir rice to separate. Beat yolks of eggs. Beat whites to a froth and add both to the rice. Then sift flour, baking powder, salt and sugar together. Add flour mixture alternately with milk. Have gem pans greased, fill 2/3 full and bake in a hot oven at 375 degrees for 15 minutes. Serve hot with butter or syrup. Enough for 20 popovers.
