CHICKEN WITH WILD RICE STUFFING | |
1 box UNCLE BEN'S® long grain and wild rice 1/3 c. wild rice (Quiggs or equivalent) 1 (8 oz.) can pineapple chunks 1 (4 oz.) can sweet potato yams, diced 1 med. onion 6 fresh mushrooms, thin sliced 1 stalk celery, diced 8 oz. smoked ham, diced 3 oz. prunes, chopped 1 med. chicken, deboned 1 chicken broth Cook 1 box UNCLE BEN'S® long grain and wild rice in chicken broth according to directions. Cook 1/3 cup wild rice in water according to directions. Mix all ingredients in bowl. Wash and dry chicken and spray exterior with Pam or pat with oil. Stuff chicken with above mixture, stitch or pin closed and bake for 1 to 1 1/4 hours at 375 degrees or until cooked with thermometer. |
