ELIZABETH'S DATE NUT BREAD 
1/2 lb. chopped dates
1 1/2 c. boiling water
1 1/2 c. sugar
2 eggs
2 tbsp. shortening
3 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 c. nuts
1 tsp. vanilla

Pour water over dates, let stand while getting other ingredients together. Cream shortening; add sugar and mix. Add eggs beat thoroughly. Then add dates and water. Mix well and add all dry ingredients at once. Mix well. Add nuts and vanilla.

Bake in 2 greased and floured loaf pans 45 minutes at 375 degrees. Test with straw be sure done in middle. Sometimes take a little longer. Great with cream cheese.
