ONE POT BEAN SOUP 
1 lb. sausage links
1/2 c. chopped onion
1/3 c. chopped green pepper
1 clove garlic, minced
3 c. water
2 1/4 c. (18 oz.) tomato juice
1 (15 oz.) can kidney beans, drained
1/2 c. long grain rice
1 tsp. paprika
1/2 to 1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. pepper

Cut sausage into bite-size pieces. Brown in large saucepan. Spoon off all but 1 tablespoon fat. Add other ingredients. Cover and simmer 30 minutes or until vegetables are tender and rice is done. Serves 6-8.
