CANDIED GRAPEFRUIT PEEL 
2 c. peel
1 1/2 c. water

Soak peel overnight in 1 quart cold water containing 1 tablespoon salt. Drain.

Cover and slow boil, then simmer 20 minutes. Drain. Repeat process a total of 3 to 5 times.

For each cup of peel, make a syrup of 1/4 cup water and 1/2 cup sugar. Boil peel in syrup. Let stand until dry.

This makes a great little thank you gift at Christmas time. He would put it in a plastic bag and tie the bag with ribbon, slipping a small piece of holly under the tie.
