IRISH SKILLET BREAD 
3 c. flour
3/4 c. sugar
1 tsp. salt
2 rounded tsp. baking powder
1/4 c. butter
1 egg
2 c. milk
3/4 c. raisins

Combine flour, sugar, salt and baking powder in mixing bowl (you don't have to sift). Melt butter. Beat egg slightly and add to milk. Combine with dry ingredients. You should have a wet dough as for baking powder biscuits. Add melted butter, stir in; add raisins. Mix but don't beat hard. Put a dab of butter in bottom of a 9" iron skillet, let it melt, add a dusting of flour, pour in batter, top with another dusting of flour. Score down center, but do not cut through. This cut in middle keeps dough from bursting at top when raising. Bake at 300 degrees in preheated oven for 1 hour. Turn up to 325 degrees if bread isn't browning properly. Cut in slices when warm or cool and serve with butter, jam and a cup of tea.
