FESTIVE RICE SALAD 
3 c. rice (cooked)
1 (5 oz.) Vienna sausage (cut in 1/4 inch slices)
1 can (8 1/2 oz.) peas and carrots (drained)
1 jar (2 oz.) pimento (drained)
2 hard boiled eggs (chopped)
1/2 c. onion (chopped)
1/2 c. mayonnaise
Salt
Pepper

Mix well all ingredients in a large bowl. Chill. Serves 6 to 8.
