BOTTOM CRUST: 1 1/2 c. unbleached flour 1/2 c. butter 1/4 c. cream cheese 1/2 tsp. nutmeg 1/4 tsp. salt (optional) 1/4 c. cold water Cut butter and cream cheese into dry ingredients with a fork. Add water a little at a time. When mixture resembles a coarse dough, pat into the bottom of a 9x13 inch baking dish. FILLING: 1 1/2 lbs. fresh or frozen blueberries 1/2 c. honey 1 tbsp. cornstarch 3 tbsp. water Mix cornstarch and water until dissolved. Then stir into berries along with honey. Blend well then spread over crust evenly. TOPPING: 2 c. oatmeal 1 c. unbleached flour 1/2 c. honey 1/2 c. canola oil 1 tsp. cinnamon Combine all ingredients with a fork. Sprinkle evenly on top of berries. Bake at 375 degrees for 30 minutes. Allow to cool before cutting into bars. Recipe makes 24 2 inch bars. |
