PORK CHOP RICE BAKE 
6 pork chops, 1/2" thick
3/4 c. long grain rice
1 qt. tomatoes
1 tsp. salt
Dash pepper
1/2 tsp. chili powder
1/4 c. chopped green pepper
1 c. shredded cheddar
6 green pepper rings
6 mushroom crowns
6 slices onion

Place rice in 9"x13" baking dish or pan. Sprinkle seasonings and chopped green pepper over. Add tomatoes. Arrange pork chops on top, salt lightly, place onion slice on each chop. Cover tightly with foil, bake at 325 degrees for 1 1/2 hours. Remove foil, sprinkle cheese over all, place pepper ring and mushroom crown on each chop. Return to oven and bake 10 to 15 minutes longer.
