WILTED LETTUCE WITH FETA CHEESE 
SALAD:

3 c. torn mixed lettuce (leaf, red leaf and romaine)
1 c. cooked fresh peas or Green Giant frozen sweet peas, thawed, drained
1/2 c. feta cheese
1/2 c. coarsely chopped seeded tomato
1/4 c. chopped onion
1/4 c. chopped fresh basil or 2 tsp. basil leaves

(From a 16 ounce package).

DRESSING:

1/3 c. cider vinegar
2 tbsp. olive oil or walnut oil
2 garlic cloves, crushed
1/4 tsp. freshly ground black pepper

In large bowl, combine all salad ingredients. In small skillet, combine all dressing ingredients; cook over medium heat until hot. Pour over salad; toss gently. Serve immediately. 4 (1 cup) servings.

MICROWAVE DIRECTIONS: In large bowl, combine all salad ingredients. In 2-cup microwave-safe measuring cup, combine all dressing ingredients. Microwave on High for 1 to 2 minutes or until hot. Pour over salad; toss gently.

COOK'S NOTE - WALNUT OIL:

French imported walnut oil has a delicate walnut flavor. Because it loses its flavor quickly, purchase it in small quantities and store it in the refrigerator.

Since microwave ovens vary in power, you may need to adjust your cooking time.
