BITTERSWEET FARM CHICKEN | |
1 broiler-fryer chicken, cut in parts 1/2 c. flour 1 tsp. salt 1/4 tsp. pepper 8 tbsp. butter, divided 1 tbsp. julienne orange peel 1/4 c. lemon juice 1/4 c. orange flavored liqueur 1 tbsp. soy sauce 1/4 c. honey 8 whole cooked baby carrots In paper bag, mix together flour, salt and pepper; add chicken, a few pieces at a time, and shake to coat all sides. In a large baking pan, place 4 tbsp. of the butter and heat until melted. Roll chicken in butter to coat all sides and arrange, skin side down, in single layer. Bake in 350 degree oven for 30 minutes. In small saucepan, place remaining 4 tbsp. butter and melt over medium heat; stir in orange peel, lemon juice, liqueur, soy sauce and honey. Set aside 2 tbsp. mixture. Remove chicken from oven, turn and pour orange-honey mixture over chicken. Return to oven and bake, basting occasionally, 30 minutes longer or until chicken is glazed and fork can be inserted with ease. Add reserved glaze to carrots and serve with chicken. Makes 4 servings. This won 4th place in National Broiler Council Chicken Contest. |
