EASY GNOCCHI AND CAVATELLI 
4 c. sifted flour
1 egg
1 c. instant potato flakes
1/2 cold milk
1 1/4 c. water
1 tsp. salt

Mix all together, flour and roll; thicker than a pencil, cut into 1 inch pieces and flip with thumb. Boil in salted water; drain and serve with favorite spaghetti sauce.

CAVATELLI:

4 c. sifted flour
1 lb. Ricotta
1 tsp. salt
1 egg
1/4 c. milk

Mix all together, knead well; roll thin like finger; cut in 1 inch pieces. Boil in water; drain. Serve with favorite spaghetti sauce.
