MACARONI CASSEROLE 
1 lb. cheese (med. sharp)
1 (8 oz.) box macaroni
1/2 c. butter
1 can cream of mushroom soup
1 c. mayonnaise
1/2 c. onion, chopped
Pimento (optional)
1 pkg. Ritz crackers, crushed

Cook macaroni (salt). Mix mushroom soup, mayonnaise, grated cheese, onion and melted butter. Place in oblong dish (buttered). Sprinkle crushed crackers on top and dot with butter. Cook at 350 degrees about 30 to 40 minutes until crackers look brown. You need to half this recipe if you are feeding 2 to 4 people. This feeds a lot. Delicious!
