HIGHBROW HADDOCK 
1 lb. frozen haddock fillets
1 c. sour cream
1/4 c. chopped onions
4 tbsp. butter
1/4 tsp. salt
Dash of pepper
1 c. milk
1 c. shredded American cheese
4 oz. can mushroom pieces
1 c. thawed frozen peas
2 tbsp. flour
1 c. soft bread crumbs

Cover haddock with water. Simmer until it flakes, 12 to 15 minutes. Drain. Break into large chunks. Cook onion in 2 tablespoons butter until tender. Blend flour, salt, and pepper. Add milk, all at once. Cook, stirring constantly, until mixture thickens and bubbles. Remove from heat and add cheese; stir until melted. Combine with sour cream, fish, mushrooms, and peas. Combine crumbs and 2 tablespoons butter; spread on top. Bake at 400 degrees for 15 to 20 minutes. Garnish with paprika.
