SOUTHERN GUMBO 
1/4 c. bacon drippings or butter
1 lg. onion, chopped
2 c. canned tomatoes
1 1/2 tsp. salt
1/2 tsp. pepper
3 c. okra, sliced
3 c. bouillon
1 c. uncooked rice

Melt drippings or butter in large heavy soup kettle. Add onion. Saute until lightly browned. Add remaining ingredients. Tightly cover. Heat to boiling; then reduce heat. Simmer for 30 minutes. Serve hot. Serves 6.
