AUNT MAE'S LEMON BARS 
1 egg
1/3 pkg. butter, softened
1 pkg. lemon cake mix
2 eggs
1 c. granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. grated lemon peel
1/4 c. lemon juice
Confectionery sugar

Preheat oven to 350. Mix one egg, butter and dry cake mix until crumbly. Reserve one cup of this mixture. Pat remaining mixture lightly in ungreased 13x9x2 inch pan. Bake cake 15 minutes, or until light brown. Beat 2 eggs, granulated sugar, baking powder, salt, lemon peel and lemon juice with rotary beater until light and foamy. Pour over hot crust. Sprinkle with reserved crumb mixture. Bake 15 minutes or until light brown. Sprinkle with confectionery sugar. Cool, then cut into bars.
