SAUERKRAUT CASSEROLE 
1 (2 lb.) can sauerkraut
2/3 c. instant rice
1 med. onion, chopped
1 lb. ground beef or (pork sausage)
1 1/4 tsp. salt
1/4 tsp. pepper
1 (15 oz.) can tomato sauce

Spread sauerkraut in covered casserole dish. Sprinkle with rice, ground meat, chopped onion, seasonings and tomato sauce. Bake at 350 degrees for 45 minutes. Makes 6 servings. Excellent source of vitamin C and low in calories (45 per cup).
