3/4 tsp. salt 1 3/4 c. flour 1/4 c. sugar 2 1/2 tsp. baking powder 1 egg 3/4 c. milk 1/3 c. cooking oil Jam or jelly Turn oven to 400 degrees to preheat. Measure the flour, sugar, baking powder, and salt into the medium mixing bowl. Stir to mix with wooden spoon. Use a fork to beat the eggs in the small mixing bowl. Add milk and oil; beat until well mixed. Pour milk mixture over flour mixture. Stir with wooden spoon only until all flour is set. Batter should be lumpy. Don't stir too much or muffins will be hard. Spoon half the batter into muffin pans until each cup is about 1/3 full. Put a teaspoonful of jelly or jam on the batter in each cup. Fill with remaining batter. Put cupcake pans into oven. Bake until muffins are golden, about 20-25 minutes. Cool about 5 minutes. Makes 12 muffins. |
