MARY O'S COLD RICE SALAD 
1 pkg. Rice-a-Roni fried rice with almonds
1 can sliced water chestnuts
1 c. sliced black olives
1 jar marinated artichoke hearts, cut in pieces
3 green onions, finely chopped
1 sm. bell pepper, seeded & diced fine
1/3 c. mayonnaise
1 sm. pkg. slivered almonds, blanched & toasted

Prepare packaged rice as directed. Add 1/2 cup more water than called for in package directions, so rice doesn't overdry. Cool in refrigerator. Drain water chestnuts and olives, but add juice of artichokes to rice to moisten. Add all ingredients to rice and toss. Refrigerate for at least 2 hours before serving.
