BRAN MUFFINS 
1 1/4 c. sugar
1/2 c. salad oil
2 eggs, well beaten
2 c. buttermilk
2 3/4 c. flour
1/2 tsp. salt
2 3/4 tsp. baking soda
1 c. bran buds
2 c. all bran
1/2 c. chopped dates
1 c. boiling water

Mix together sugar, oil, eggs and buttermilk. Sift flour, soda and salt. Add to above mixture. Add bran buds, all bran, dates and boiling water. Mix well. Place in covered container. Let set overnight in refrigerator.

Bake in muffin pans (lined with cupcake liners or sprayed with Pam) at 400 degrees for 15 minutes. Bake as many as you need. Remaining batter will keep several weeks. Do not stir when you spoon them into pans.
