MINESTRONE 
1/2 lb. dry white beans, soaked in water overnight
3 qt. salted water
1 tsp. olive oil
1/8 lb. salt pork, diced
1 clove garlic, chopped fine
1 sm. onion, chopped fine
1 leek, diced & washed
1 tsp. chopped parsley
1 tsp. chopped basil
1 tbsp. tomato paste
3 tomatoes, peeled, seeded & chopped
3 stalks celery, chopped
2 carrots, sliced
2 potatoes, diced
1/4 sm. cabbage, shredded
1 zucchini, diced
1 1/2 qt. water
Salt to taste
1/2 tsp. black pepper
1 c. elbow macaroni
6 tbsp. grated Parmesan cheese

1. Drain beans and boil for an hour or until tender.

2. Place olive oil in large kettle and add salt pork, garlic, onion, leek, parsley and basil. Brown lightly. Add tomato paste thinned with a little water and cook five minutes. Add the tomatoes, celery, carrots, potatoes, cabbage, zucchini, water, salt and pepper. Cook slowly 45 minutes to an hour. Add the beans.

3. Add the macaroni and cook 10 minutes. Adjust seasoning and serve immediately. Serve with cheese. Delicious. 6 to 8 servings.
