WILD RICE BAKED CHICKEN 
2/3 c. uncooked wild rice
4 celery ribs, sliced (approx. 2 c.)
1 med. sized green pepper, diced
1 1/3 c. water
1 sm. onion, chopped fine
2 tsp. chicken bouillon granules
1 tsp. salt
Pepper to taste
3 whole chicken breasts, halved & skinned
Soy sauce

Or 2 chicken bouillon cubes, crushed.

Thoroughly wash wild rice in warm tap water; drain. In large bowl mix uncooked, washed wild rice, celery, green pepper, onion, water, chicken bouillon and seasoning. Pour into greased 2 quart baking dish; place chicken breasts on top of rice mixture and brush with soy sauce. Cover dish (foil will do). Bake in preheated 350 degree oven for 1 1/2 hours or until rice is tender. Serves 4.

Additional soy sauce may be brushed on chicken during the baking time. Be sure to re-cover baking dish each time.
