POACHED SALMON STEAK 
2 tbsp. butter
1/3 c. chopped onions
1/3 c. chopped carrots
1/3 c. chopped celery
4 c. water
1/2 c. dry white wine or 1/4 c. vinegar
Salt to taste
Peppercorns to taste
Salmon steaks

In large skillet, heat butter, add vegetables and cook 5 minutes. Add water, wine and seasonings and simmer 5 minutes.

Place salmon in boiling liquid, but don't completely cover steaks. Lower heat and cover skillet. Simmer gently 5 minutes per pound. Remove and serve with dill sauce.

DILL SAUCE:

1 c. sour cream
3/4 tsp. dill weed
2 tbsp. butter
1/2 tsp. onion, finely minced
1/4 tsp. garlic powder
Salt & pepper to taste

Melt butter, add onion. Saute for 1 minute. Add sour cream and dill. Warm thoroughly. This recipe is not only delicious, but convenient to do in a microwave oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
