RAW APPLE CAKE 
1/2 c. shortening
1 c. sugar
1 1/2 c. apple (very finely chopped)
2 c. sifted flour
1 1/2 tbsp. cocoa
2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice
1 c. chopped dates
1 c. chopped walnuts
1/2 c. candied cherries, optional
1 1/2 c. glazed mixed fruit, optional

Cream shortening and sugar. Mix in apples. Sift dry ingredients and stir in. Add nuts and fruits. Mix well. Spread in a greased and floured 8x12 pan. Bake 1 hour at 325 degrees. Remove from oven. Spread on topping. Place under broiler for 5 minutes to glaze.

TOPPING:

1/4 c. butter
1/2 c. orange juice
1 c. powdered sugar
1 tsp. grated rind

Blend butter and sugar, then stir in orange juice and rind.
