OLD COUNTRY NEAPOLITAN GIAMBOTTE 
1/2 c. olive oil
4 lg. potatoes
1 med. size eggplant
1 sm. onion
2 lg. green and red bell peppers
2 med. zucchini
1 lg. ripe tomato
1 lb. Italian sweet sausage (optional)

In a large mixing bowl, dice potatoes, eggplant, pepper, zucchini, and tomato.

In 10 inch skillet pour 1/2 cup olive oil, dice onion, brown on low heat, cut sausage into 1 inch chunks and brown with onion. Pour diced vegetables into skillet, mix with sausage and onion.

Start cooking medium heat setting for 15 minutes, stirring, low to simmer, cover and continue cooking 45 minutes, stirring occasionally. Serves 4 to 6 nicely.

Great, quick, complete meal or side dish. A touch of Italy.
