PASTRY APPLE BARS 
2 1/2 c. sifted flour
1 tsp. salt
1 c. shortening
1 egg yolk
8-10 apples, pared and sliced
3/4-1 c. sugar
1 tsp. cinnamon
1 egg white

Combine flour and salt; cut in shortening. Add enough milk to egg mixture to make 2/3 cup liquid. Mix well. Stir in flour mixture. On floured counter, roll 1/2 the dough to 17 x 12 inches. Fit dough into and up sides of a 15 1/2 x 10 x 1 inch pan (large jelly roll pan) or use 2 cookie sheets with edges, cutting the bottom dough, just rolled, in half, 8 x 6 inches. Top with apples.

Combine sugar and cinnamon; sprinkle atop apples. Roll remaining dough and place over apples. Seal edges. Put slits on top. Beat egg whites until frothy. Brush on crusts. Bake in a 375 degree oven for 50 minutes.

1 c. powdered sugar
3-4 tsp. milk

Combine. Drizzle on warm bars. Makes 3 dozen.
