PEPPERCORN BEEF KABOBS | |
1 lb. well trimmed boneless beef sirloin steak, cut 1 1/4 inches thick 1 1/2 tsp. crushed dried green or black peppercorns 1/2 tsp. salt 1/2 tsp. paprika 1 garlic clove, minced 1 sm. onion, cut into 8 wedges Cut beef sirloin steak into 1 1/4 inch cubes. Combine peppercorns, salt, paprika and garlic in shallow dish. Add beef cubes, toss to coat with peppercorn mixture. Thread an equal number of beef cubes onto each skewer, along with 2 onion wedges. Place kabobs on rack in broiler pan so surface of meat is 3 to 4 inches from heat. Broil 10 to 13 minutes to desired doneness turning occasionally. (Weigh single servings.) Serve with 1 cup tossed salad and 1 cup corn. Single serving = 4 ounces protein, 1 cup salad, 1 cup starch. |
