APPLESAUCE OATMEAL COOKIES 
2 c. sugar
1 c. shortening
2 eggs
2 c. applesauce
2 tsp. baking soda
3 1/2 c. flour
2 tsp. cinnamon
2 tsp. nutmeg
1 tsp. salt
2 c. quick-cooking oats
2 c. raisins
1 c. nuts (optional)

Cream sugar and shortening. Beat eggs and add; beat until smooth. Add soda to applesauce. Stir, then add to above mixture. Sift together the dry ingredients; mix well with egg mixture. Add oatmeal, raisins and nuts. Stir until well moistened. Drop by spoonfuls on greased cookie sheet. Bake at 425 degrees for 10 minutes or until browned.

For more variety: Use half brown raisins and half golden raisins. Chocolate chips are also excellent.
