ALMOND CRISP COOKIES 
This recipe has been handed down for 4 generations.

1 cup granulated sugar
1 1/4 sticks butter (softened)
2 eggs
2 1/2 cups all-purpose flour (sifted)
1/2 tsp. baking powder
1 tsp. almond extract

Mix sugar, butter and eggs together first. Add flour, baking powder and almond extract (mix well). Refrigerate dough overnight or for at least 5 hours.

TO MAKE COOKIES:

Pull out a handful of chilled dough and place it on a table with a thin layer of flour already on it.

Flour rolling pin (so dough does not stick to rolling pin) and flatten out dough very thin. Use a cookie cutter to make your favorite shapes and place them on a cookie sheet.

Using a small cup with egg whites only, brush on top of cut outs. Leave plain or decorate with colored sugar on top.

Bake in oven at 375°F for 8 to 10 minutes or until lightly brown.

Makes about 30 cookies.
