APRICOT CHEESE DELIGHT 
1 can (29 oz.) apricots, drained & fine cut
1 can (20 oz.) crushed pineapple, drained
2 pkg. orange flavored Jello sm.
2 c. hot water
1 c. combined apricot & pineapple juice
3/4 c. miniature marshmallows

FRUIT CHEESE TOPPING:

1/2 c. sugar
3 tbsp. flour
1 egg, slightly beaten
1 c. combined apricot & pineapple juice
2 tbsp. butter
1 c. whipping cream, chipped
3/4 c. grated Cheddar cheese

Combine sugar and flour. Blend in egg. Stir in juice and cook over low heat, stir in butter. Cool. Fold in whipped cream and spread over chilled gelatin layer. Sprinkle top with grated cheese. Chill.
