NANCY'S FAVORITE CREAM CHEESE
PUMPKIN ROLL
 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt

FILLING:

1 c. powdered sugar
8 oz. cream cheese, softened
4 tbsp. soft butter
1/2 tsp. vanilla

Beat eggs, sugar, pumpkin and lemon juice. Mix the rest of the dry ingredients together. Add dry ingredients to beaten mixture.

Spray large cookie sheet with Pam. Spread mixture on pan and bake 15 minutes at 350 degrees. Turn upside down on tea towel that was sprinkled with powdered sugar after it has cooled for 5 minutes. Roll up in towel and let it cool thoroughly. Unroll and spread with filling.
