PIZZA MEAT LOAF 
1 (8 oz.) pkg. shredded mozzarella cheese (2 c.)
1 (14 oz.) jar pizza sauce
2 lb. ground beef
1 c. seasoned dried bread crumbs
2 lg. eggs

About 1 1/4 hours before serving: Preheat oven to 375 degrees F. Reserve 1/2 cup shredded mozzarella cheese and 1/2 cup pizza sauce for topping later. In large bowl, mix remaining mozzarella cheese and pizza sauce with ground beef, bread crumbs, and eggs. In 13x9 inch baking pan, shape meat mixture into 9x5 inch loaf, pressing firmly. Bake meat loaf 30 minutes.

Pour reserved pizza sauce over top of loaf. Bake 30 minutes longer, sprinkling with shredded mozzarella during last 10 minutes of baking time.

To serve, with 2 pancake turners, carefully place meat loaf on warm platter. If you like, garnish with parsley sprigs.

To serve meat loaf cold, or use for sandwiches, cover and refrigerate; use within 3 days.
