BEEF AND BEAN TOSTADAS 
1 lb. ground beef
1 env. taco seasoning mix
12 tostada shells
2 cans refried beans
Shredded lettuce
Diced tomatoes
Shredded cheddar cheese
Hot taco sauce

Prepare ground beef according to directions on seasoning mix package. Preheat oven to 350 degrees. Place tostada shells on baking sheet. Warm in oven 5 to 7 minutes. Spread each tostada shell with 1/4 cup beans. Top with 1 to 2 tablespoons ground beef mixture, shredded lettuce, tomatoes, cheese and taco sauce.

I grew up in Southern California and my parents lived in Mexico for 20 years. NOBODY uses ground beef for Mexican food except Taco Bell.

I grew up in alaska, and have been to mexico plenty of times, and they do use ground beef in some places. You just have to know where to look. And by the way, del taco, and jack n the box also used ground beef in there tacos. Nothing wrong with lean ground beef.

Who cares about authenticity. It's the kind of homemade Tex-Mex us white kids grew up eating as kids because we had all of the ingredients around and it was easy to make. And it tastes good.

Don't forget a dollup of sour-cream, or crema if you've got it, and maybe some avacado slices.

After reading Jane's comment regarding ground round (ground beef as she calls it), I am even more anxious to try this recipe. Jane, the best is using fresh caught fish bar-b-qued on the back of the boat - for taco's or whatever. NOW THAT IS AUTHENIC.

Jane... in grew up in so cal too... yes Mexico has many alternatives to ground round (ground beef).. We just put lots of taxation on it.. that makes everything o.k.!!
