OLGA'S BISCOTTI 
1 grated orange rind
1 grated lemon rind
10 c. flour
2 c. sugar
8 tsp. baking powder
1 c. vegetable oil
1/4 lb. butter, softened
1/4 lb. butter, softened
10 lg. eggs, beaten
3/4 c. annisette
2 oz. lemon extract
2 oz. anise extract

Mix all dry ingredients with rind. Cut in butter and butter. Beat eggs, oil, anisette and extracts and add to dry ingredients. Knead all together until it is a good consistency.

Roll on floured pastry board in desired shapes. Place on cookie sheet. Bake 15 minutes at 325 degrees. Coat cookies with light sugar frosting. Makes about 6 dozen.
