PEAS WITH ROUX (RANTAS BORBSZHO) 
1 lb. fresh shelled peas or 1 can peas
1 tbsp. butter
2 tbsp. all-purpose flour

Cook shelled peas until just tender, retaining 1 1/2 cup liquid. If you use canned peas just heat at a moderate temperature so peas don't get squares. Brown the flour in the butter and keep stirring then add peas to flour mixture continue stirring so it is not lumpy. Serve hot with meat dish.
