PASTA WITH PINENUTS, PEPPERS &
HERBS
 
1 1/2 tbsp. olive oil
2 tbsp. pine nuts
1 lg. clove garlic, minced
4 oz. pasta (shells or rotini)
1/2 red & 1/2 yellow bell peppers, cut in thin strips
1/4 c. chopped cilantro
Salt
Freshly ground white pepper

Heat oil in large skillet. Add pine nuts, peppers and garlic; saute over medium high heat until pine nuts are lightly browned, about 5 minutes.

Meanwhile, cook pasta according to package directions. When tender, drain well and add to skillet. Stir in cilantro and salt and pepper to taste, tossing well. Serve hot or tepid.

Serves 2.
