OATMEAL COOKIES 
1/2 c. butter
1/2 c. lard
1 c. sugar
1 c. brown sugar
2 eggs, well beaten
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. flour
1/2 c. chopped nuts
3 c. quick cooking oatmeal
1/2 c. shredded coconut

Cream butter and lard, adding white and brown sugar. Blend in 2 well beaten eggs and vanilla. Sift soda and salt to flour, adding to mixture. Then add oatmeal, chopped nuts and coconut until smooth and roll in rolls (long). Chill overnight slice thin and bake on ungreased cookie sheet at 350 degrees for 10-15 minutes. This recipe makes about 8 dozen.
