ZUCCHINI JAM 
3 c. packed, ground-up zucchini (use food chopper; drain liquid)
3 c. sugar
1 sm. can crushed pineapple (drained), approximately 8 oz.
1/3 c. lemon juice
1 (3 oz.) box flavored jello (apricot, lemon, or desired flavor)

Combine zucchini, sugar, pineapple, and lemon juice. Cook 10 minutes from time it starts to boil. Remove from heat and add jello. Mix thoroughly. Pour in sterile jars and cover with wax.
