CHEESY ONION STEAK
1/2 lb. beef chuck steak, 1/2 inch thick
2 tbsp. all-purpose flour
1/2 tsp. salt
2 tbsp. cooking oil
4 slices onion
Lemon pepper
1/4 c. shredded American cheese

Remove any bone from steak; cut meat in two pieces. Coat with mixture of flour and salt. Pound to 1/4 thickness. In 8-inch skillet brown the meat slowly in hot oil. Top each piece with 2 onion slices; sprinkle with lemon pepper.

Add 1/2 cup water. Reduce heat; cover and simmer until tender, about 45 minutes. Sprinkle cheese over onion. Cover; heat 1 to 2 minutes to melt cheese. Makes 2 servings.
