RICE PUDDING 
1 lb. rice
1 gallon milk
1 dozen eggs
3 c. sugar
3 tbsp. vanilla
Cinnamon

Cook rice until it gets dry but not sticky. Add gallon of milk; let come to bubbling boil. Turn down stove to simmer and simmer 20 minutes. Take off stove. Combine eggs, sugar and vanilla and add to mixture.

When adding these ingredients, stir quickly and constantly. Pour in pan. Sprinkle with cinnamon.
