CHOCOLATE NUT DOUGHNUTS | |
2 cups all-purpose flour 1 1/2 tsp. baking powder 1/4 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 2 (3 3/4 oz. ea.) pkgs. chocolate fudge pudding and pie filling (not instant) 1/4 cup finely chopped walnuts 2 eggs 2 tbsp. vegetable oil 1/2 cup milk vegetable oil or lard, for deep frying Mix and sift flour, baking powder, baking soda, salt, cinnamon, pudding mix and walnuts. Add eggs, oil and milk. Stir until dough cleans the sides of bowl. Place dough on a heavily floured board and knead gently until dough is smooth. Roll out to 1/4-inch thickness and cut with floured doughnut cutter. Fry in 360°F oil on each side. Drain on paper towels and allow to cool. Variation: Place warm doughnuts in paper bag with sugar and shake until coated. Makes about 18 doughnuts. Submitted by: Marilynn Conley |
