BUENELOS 
Flour tortillas, cut into fourths
Hot oil
Cinnamon and sugar

In a frying pan shallowly filled with hot oil, fry each tortilla BRIEFLY. (Basically, if your oil is hot, you put it in, turn it over and take it out. It should be barely brown.) Remove and cover with cinnamon and sugar. Serve.

NOTE: At some festivals these are sold as elephant ears... just don't cut the tortilla into fourths.
