BUTTERMILK POUND CAKE 
1 1/2 c. shortening (butter)
2 1/2 c. sugar
3 1/2 c. flour
1/2 tsp. salt
1 c. buttermilk
1/2 tsp. baking soda, dissolved in 1 tbsp. water
1 tbsp. lemon extract
4 eggs

Cream shortening and sugar. Beat eggs into mixture, one at a time. Add milk, soda, and water mixture, salt and lemon extract. Add flour, a little at a time, beating until dough is fluffy, with each addition. Pour into greased and floured tube pan. Bake at 350 degrees for 1 hour and 15 minutes.
